Turn on the grill and your greens will never be the same.
It might sound strange if you're used to eating fresh greens in salads (and most of us are). But there is absolutely no reason not to grill or cook your lettuce. Heartier varieties—like romaine, escarole, and endive—stand up just fine to a little heat. Even better, their natural flavors only get more complex when you introduce a little smoke and char to the mix. Endive is a little bit bitter, which can be a tough flavor for some people to get into—but grill it and dress it up with a super savory, umami-packed peanut sauce and spicy red chile slices, and suddenly you've got a salad that's almost (dare I say it?) meaty.

Sweet, slightly bitter, and with just the right amount of smoke, escarole takes on an absolutely amazing flavor that's only enhanced with you add pecans and an orange-honey-poppy seed dressing.
